I’ll be honest, when I think “Japanese Food,” the first thing that comes to mind is sushi. But did you know sushi doesn’t come close to the most common food you would find in a Japanese home? Makoto Yoshino knew we were all missing out on one of the best meals Japan gets to enjoy, and set out to change that.

Kalé is a Japanese comfort food, dating all the way back to the year 1863, where Hiizu Miyake discovered the dish during a trip to Europe. Because of this history, it has traditionally been considered a European dish. During the last 100 years, it has gained popularity in Japan that it is now considered a national dish, developing into many different forms.

Today, a Japanese person is likely to eat the dish 84 times a year; undoubtedly, it is one of the most popular food in Japan. Savory, and similar to a stew consisting of meat, onions, carrots, tomatoes, and many other vegetables, locals enjoy it over Japanese rice. Americans who have been to Japan and tried it say “It’s addictive!”

Originally from Kobe, Japan, owner of Kalé Makoto Yoshino immigrated to the U.S. to attend college in Michigan and stayed for twelve years to work and attend graduate school in business. Since moving to Portland and becoming a U.S. citizen in 2008, he has been on a quest to find restaurants in the U.S. that replicate the comfort foods of his native Japan. Seeing a gap, he has decided to fill it.
